Made from scratch: Banana bread

Ingredients for 2 loaves:

Banana bread
The banana bread is baked, cooled, and cut into pieces. 
Each individual slice can be served buttered or with jam.

½ cup butter, softened

¼ cup flaxseed meal

1 cup sugar

1 egg

1 cup mashed overripe bananas

2½ cups flour

1 tsp baking soda

½ tsp baking powder

½ tsp salt 


Directions:

Butter loaf pan and preheat oven to 350 C.

Gently fold flour baking flour, salt, and baking soda in a large bowl.

Create a well in the centre of the flour.

Combine butter, sugar, and an egg in a medium bowl.

Mash overripe bananas together.

Add the ripe bananas and flaxseed meal into the medium bowl with the wet ingredients.

Mix

Spoon the wet ingredients into the flour well of dry ingredients and mix together.

Spoon the mixture into the loaf pan.

Bake banana bread for 55-60 minutes (test with a cake tester) and serve it.   


Tip: If you have any excess mixture left over, then you can make muffins.
