Ingredients for 1 side serving:

1 Yukon Gold Potato
1 tbsp Butter
1/8 cup Milk/Heavy Cream
Toppings are optional

Directions:

1. Peel the potato with a knife or potato peeler and chop it into quarters.

2. Place the potatoes into cold water right away to make sure they do not dry out.

3. Place the potato pieces into a pot of cold water and add a pinch of salt.

4. Bring the potatoes to a boil and then turn the heat to low so the potatoes can cook at a simmer for about 10 minutes.

5. Once you can easily stick a fork into potato cube then you know the potatoes are done.

6. Once done scoop out the potato cubes and drain the water.

7. Put the potatoes back in the pan and stir them around to dry out excess water.

8. Mash the potatoes in a bowl until smooth. Leave them in the bowl in a warm dry place for a bit to dry them out some more.

9. Melt if needed butter in a microwave. Mix butter into the mashed potatoes.

10. Heat up some milk or heavy cream in a microwave.

11. Gradually add the warm milk/cream to the potatoes. If you add too much all at once you will end up with potato soup, so mix in one spoonful at a time is best.

12. Scoop onto the dish with the rest of your meal and if desired add your choice of toppings.

13. Topping can include gravy, chopped meat, butter, pepper, herbs, sage, peas, carrots, etc.

Tip 1: You can also mash the potato with a ricer.

Tip 2: Feel free to mash up some cheese with the potatoes for some extra flavour.

Tip 3: Use an ice cream scooper to add shape to the potatoes.
